Topped off home wines

Last night, I topped off my home wines with about 600 ml. of 2000 Firestone Chardonnay. Due to the mild heat wave, the ambient temperatures were about 68. Slight thermal expansion but nothing went through the airlock.

Tasting Notes:
* 2001 Zinfandel: Damas
N: the oak is
T: oak is integrating well adding some vanillin and smoothing the tannins. great fruit but tannins bind. Still need to fine a little bit.
__ Before next topping, add egg white for 30 gal.

* 2001 Syrah: Kruse
N: the primary cherry's are transforming to more earthy flavors. still an incredible nose.
T: Excellent roundness and full finish. Evolving from fruit driven into a more complex wine

* 2001 Chardonnay: Ritchie
- The tri-clover clamp had some air pressure
T: the wine was a little to warm, but still had excellent structure. could use more oak for 2 weeks.
