Impacts of Heat Wave

We've had a head wave last couple of days that will significantly contribute to ripening. The past few weeks' moderate temperatures led to even and gradual ripening so this heat should accelerate the ripening. On Aug. 26, David Coffaro predicts in his Winemaking Journal that "If we continue to see highs in the 90's, sugars will go up as much as 3% in one week.".
