Measuring Brix (Sugar levels)

Brian uses a hydrometer to measure the brix, or sugar-levels, of the juice. When sugar levels are too high, the must needs to be diluted with acidulated water in order to drop the sugar, while maintaining the acidity and juice-to-skins ratio.
